Eat like a Edo period, Soba noodles in Asakusa

by Naomi

Tokyo, the town has been standing as a center of Japan since the beginning of 17th century. The period of Tokugawa government is called Edo era, and thousands of food cultures/arts are made in the longest no-war period of time in japan history.
Soba is one of the biggest wave in Edo food culture – thin noodle made of buckwheat flour. Basically it’s serviced with cold savoy dashi sauce to dip, but I also enjoy to eat hot soup in winter particularly.
Asakusa is well known city for remaining atmospheres of Edo, and many selection of old fashioned soba restaurants.

Here in summer, I often take Sudachi soba that serves with cold dashi soup and slices of fresh sudachi, citrus fruits.
Japanese cuisine uses citrus fruits very much such as Yuzu, Kabosu.. it’s season-free but when it comes with dashi, a fresh wind blows in your mouth! So I love to have it for some refreshments in the hot season.

Soba Shonin 蕎上人, classic soba restaurant, Asakusa station

The restaurant is located close to Asakusa station. The place is really popular to tourists who want to touch the Edo experience – Kimono, temple, street food! Hence, the whole city is open to visitors and mostly everything is English/Chinese available. Even if some don’t prepare the international menu, people in a shop is really open to foreigners.

Me in Summer kimono (Yukata)

To be honest, in my Tokyo life over a one quarter of century, there’s not much memory left about the city. To defend myself – the branding of the city is all about tourism (my personal opinion!), so I don’t have a chance to visit.
As introducing good food spots to the world I feel bad little.. then I decided to have one-day trip in Asakusa!
I will make another post about the day, but leaving a shop link where I did kimono dressing up. It was a simple offering but plenty of kimono/Yukata selection and really cheap. <shop link: https://waraku-asakusa.com>

Sudachi Soba すだち蕎麦

Cold soba noodles with savoy dashi soup, dressed with slices of fresh green sudachi.

Dashimaki だし巻き

Dashi flavored rolled egg. The dashi is same as the soba noodles’ soup.

People says “a good soba restaurant makes a good dashimaki too”.

Beers ビール

Edo people often enjoyed drinking at a soba restaurant while waiting soba noodles to be served. They didn’t have seated so long – quick drinking, quick eating.
